You seem to have misunderstood everything you read there. The oldest remains of New Testament books are papyri from the 2nd century. The oldest complete New Testaments date from the 4th. In any case, historians do not date books based solely on the date of the manuscripts; they date them by looking at internal evidence of when they were written. Manuscripts are like fossils; they are preserved by luck and provide historical snapshots, not earliest possible dates.
